PECAN PIE
1/2 cup granulated sugar
1/2 cup brown sugar plus 3 TBSP
1/2 tsp. salt
1 cup light corn syrup ( I used 1/2 cup light corn syrup and 1/2 cup dark corn syrup )
1/3 cup melted salted butter
1 tsp. vanilla
3 whole eggs beaten
1 heaping cup pecans
Prepare 9 inch pie crust. Preheat oven to 350 degrees. Make filling: Mix granulated sugar, brown sugar, salt, corn syrup, butter, vanilla, and eggs together in a bowl. Place the pecans in the bottom of the unbaked pie shell. Pour the syrup mixture over the top. Cover the crust lightly with foil or use pie edge cover.
Bake the pie for 40 minutes and then remove the foil from the pie edge. The pie should not be overly jiggly when removed from the oven (though it will jiggle a bit) If it shakes a lot ...tent foil over the top and bake additional 20 minutes or until set. It can take from 50 to 75 minutes.
